Curry Turkey Sliders with Sweet Potato "Buns"

This high-protein meal is easy to whip up in a pinch. The curry packs a flavorful punch and also provides anti-inflammatory benefits from the turmeric. The sweet potato buns offer a healthy complex-carb alternative to a traditional bun.

Makes: 8 sliders (serves 3 to 4)

 

Ingredients

  • 1.25 lb. ground turkey (97% lean)

  • ¼ cup diced red pepper

  •  ¼ cup chopped cilantro

  •  2 Tbsp curry powder

  •  1 Tbsp sweet chili sauce

  •  ½ tsp powdered ginger

  •  3 cloves garlic, minced

  •  1 egg

  •  salt & pepper to taste

  •  1 large sweet potato (white or orange)

  •  olive oil (to coat sweet potato)

  • ½ medium onion

  • mango chutney (found in most grocery stores) and lettuce to garnish if desired

 

Simple Spicy Sauce

·         2 tbsp Sriracha

·         2 tbsp Sweet Chili Sauce

Directions

 

For the sweet potato “buns”

  1. Carefully slice one large sweet potato into inch rounds. Place the sweet potato slices into a large bowl and drizzle with 2-3 teaspoons of olive oil. Toss well to evenly coat the slices.

  2. Place the slices on a parchment-lined baking pan and sprinkle with a little sea salt to taste. Bake in a 425°F oven for 15-20 minutes, until soft and tender. 

 

For the patties

  1. In a large mixing bowl combine turkey, chili sauce, red bell pepper, cilantro, curry powder, egg, ginger, garlic and salt and pepper.

  2. Form into 8 patties.

  3. Heat a large non-stick skillet over medium heat. Add patties and cook 3-5 minutes on each side until fully cooked. Alternatively you can cook the burgers on the stove in a grill pan or cook patties on an outside BBQ grill.

  4. While patties cook, caramelize the sliced onion in another pan with 1 Tbsp coconut oil, olive oil or butter. Occasionally stir onions and scrape down pan as the juices of the onion seep out. Once browned and caramelized, remove from heat.

 

To serve, place lettuce on the bottom of the “bun” and top with 1 tsp of mango chutney or “simply spicy sauce.”

Then add turkey patty. Top the patty with more chutney and/or “simple spicy sauce.” Then layer with caramelized onions. Enjoy!
